Vegan Eating

I thought instead of adding all my vegan experiments to the main blog I would create a page just for vegan eating.  Most recipes were found on Pinterest or Yummly and tweaked just a bit.  I will note the original location along with any changes I made.

 

Breakfast-

My go to breakfast was overnight oats.  I couldn’t get into some of the other recipes. Plus overnight oats were easy enough to throw into a jar at night and grab in the morning.  Base recipe-

1/2 c. Oats

1/2 c. Almond Milk

1 tsp each flax seed & chia seeds

Mix everything together in a wide mouth pint jar. Cover with lid and put in fridge overnight.

In the morning- add nuts and/or dried fruits and enjoy!

 

Lunch-

Lunch was typically some kind of pasta with a variety of add ins; kalmata olives, mushrooms, garlic, tomatoes, etc..

Some days I would do a salad as well but that got interesting when it came down to dressings.

However my favorite recipe was this one I found on Pinterest from Chelsea’s Messy Apron for Mexican Quinoa. I’ve made it several times- even a non-vegan version where I included chicken.  This recipe is so versatile! I could use whatever grain I had on hand (rice, quinoa) whatever canned beans and tomatoes I had, etc… experimentation is key. I never found a version I didn’t like.

I also tried this dish – Spicy Tahini Pasta Sauce found at Contentedness Cooking blog.  I wasn’t sold on the tahini. I might try it in something else. Don’t get me wrong-the dish was edible, but it just wasn’t for me.

This too I wasn’t 100% sold on but I attribute that to the fact I did not follow the recipe to the letter.

The Savory Vegan posted – One Pot Creamy Hummus Pasta– but I did not have the sun dried tomatoes & oil. I couldn’t find them anywhere so I did without. Huge mistake. Lacked flavor and some moisture…would try it again with the tomatoes.

Snacks-

This section I had the most fun with my experiments. I found energy/snack ball recipes all over creation to try. Here are a few of the experiments.

Flourless Banana Muffins– by Chocolate Covered Katie

I wasn’t a fan. Not sure if I had the wrong kind of bean but it just was not what I was hoping it would be. The concept is great and I’m sure they are a good fit for someone, just wasn’t for me.

Lemon Tumeric Energy Balls – by Natalie’s Happy Health

These were very lemony and I rather enjoyed them. Very fruity. I left the coconut dusting off some of them. I am not a huge coconut fan but I ate them with and without the dusting. Would potentially make again

Apricot Almond Coconut Energy Balls – by Flavor the Moments

I liked the combination of the apricot and almond. These were a very nice mid afternoon snack.

Healthy No-Bake Chocolate Energy Bites– by Yummy Addiction

This one was my favorite. Before you yell at me that chocolate isn’t vegan – I will tell you I used DARK chocolate w/out milk (I did read the label to make sure!) I have actually made this recipe several times and each time I’ve adjusted it just a bit. I will admit that I do not have ground flax seed, just regular. I know that impacts the texture but honestly the taste is amazing so I am good with that substitute!
