I am still playing around with how to format this experiment. However, I know I want a one stop area for my recipes. Even though you will find them in a blog post, I want them easily accessible. So here is the start of a recipe page. I am sure it will evolve in time, but for now, this is the start. Enjoy!
Smoked Chicken Tacos. The husband has a Pit Barrel smoker and if you’ve never seen it you can check it out here. It is truly an amazing purchase. I wasn’t completely on board with it until he borrowed one from a co-worker and hot diggity it was divine.
Mexican Street Corn Salad. As soon as I got to the office I realized I forgot an important ingredient, but eh, we will survive with out the freshly grated cotija cheese. The original recipe came from a blogger Jessica Gavin and can be found here. I tweaked it a bit and of course, in a rush, I mixed up a few things, but the results are still pretty dang good.
Pineapple salsa. Why? Because we picked up a nice shipment of pineapples from the fruit truck and who doesn’t love to say “salsa!” No recipe on this one – just tossed together:
1-1 1/2 cups of freshly chopped pineapple
3 roma tomatoes
2 tablespoons chopped jalapeno
1/3-1/2 cup chopped red onion
a handful of chopped colored bell pepper
2 minced garlic cloves
about a tablespoon of lime juice
2-3 tablespoons chopped cilantro & a dash of salt.
All measurements are estimates…that’s how I cook.
Churro Chex Mix. Ahh dessert. The best part of any meal. I decided on churro chex mix because I “churro” happy to work with nurses. Yes, lame, but it gets the point across. The recipe is one I had on hand from a friend, but it matches this one from the 5 Boys Baker blog. All I know is I should have doubled the recipe. Eh, live and learn.
